Raf Coffee is a popular, creamy coffee drink that originated in Moscow, Russia, in the late 1990s. Its creation is attributed to a barista who prepared a custom coffee for a regular customer named Raphael, who preferred a less bitter and smoother coffee than traditional espresso-based drinks. The signature of a Raf Coffee lies in its preparation: espresso, vanilla sugar, and cream are all steamed together simultaneously, rather than adding steamed milk to espresso and then cream. This co-steaming process creates an exceptionally silky, velvety texture and a subtly sweet, balanced flavor profile, making it distinctively smooth and less assertive than a latte or cappuccino.
Pour all ingredients into espresso machine milk pitcher and use the steam wand to froth. Aim for a rich microbubble texture like a Flat White.
